Biscuits au Fromage “Apero”
Cheese Cocktail Biscuits
Ingredients for +/- 14 biscuits
- 300g Plain flour
- 300g Butter
- 300g Comte or Beaufort d’Ete finely grated (or any hard, strong flavoured cheese)
- ½ teaspoon Dijon mustard
- 50g sesame seeds
- Salt and pepper to taste
Directions:
- Make sure the butter is at room temperature
- Grate the cheese
- Mix the cheese, flour, butter, mustard, salt and pepper in a bowl, either with a mixer or with your hands until the dough is a firm texture.
- Shape into a long log shape
- Wrap the log in cling wrap, then wrap in foil. Chill in the freezer
- Heat the oven to 220C degrees
- Remove the log from the freezer when well chilled
- Remove the wrapping and slice the dough in rounds about 3cm thick
- Sprinkle each round with sesame seeds
- Place the rounds on a non-stick baking tray and cook for 6 minutes in oven
- Check the biscuits are golden in colour, if they look too pale, replace in oven for 2 or 3 minutes, be careful they do not get too brown.
- Remove tray of biscuits, place on a wire rack to cool
- If you have any biscuits leftover, they can be kept in an airtight container for several days (that is if you have a strong will power and do not to eat them all at once)
