Mille Feuile au Comte by Matt Landmark
Comte custard slice
Ingredients for 6/8 slices
- 2 sheets puff pastry
- 500gr butter
- 4 large brown onions
- 1 tablespoon Edmond Fallot Sherry vinegar
- ½ teaspoon dark soy sauce
- 5g salt
- 60g cornstarch
- 8 egg yolks
- 240ml full fat milk
- 400ml thick cream
- 150gr Comte
- Black Pepper to Taste
Directions
- Line a rectangular, high sided cake baking tin with baking paper
- Finely grate the Comte
- Peel and finely slice the onions
- Place 2 sheets of uncooked puff pastry on a baking tray and cook until dark gold
- Melt butter in a saucepan over a medium heat
- Add onions and stir, reduce temp to low and cover pot
- Stir every couple of minutes and continue to cook for up to 30minutes
- Add vinegar and soy sauce and stir in to make a sauce
- Add a pinch of salt and remove from heat
- Trim pastry to fit the base of the cake tin
- Cover the pastry with the cool onion confit and chill in fridge
- In a heat proof bowl whisk together the egg yolks, corn flour, salt, and pepper
- Heat cream and milk in a saucepan until nearly boiling
- Slowly whisk in this hot mixture into the egg mixture, whisking all the time
- Once all mixed together pour back into the saucepan and heat
- Continue to whisk mixture while you heat it until custard is thick
- Remove from heat and whisk in 2/3 of the grated Comte
- Spoon the mixture on top of the onion and pastry base
- Place the second layer of pastry over the top and press down gently to stick it to the cheese custard
- Chill in fridge overnight
- Prior to serving, remove from tin and place on flat surface
- Remove the baking paper lining from under and around the pastry
- Slice into rectangular portions using a serrated knife for the top pastry layer and a thin sharp knife through the cheese custard and lower pastry layer
- Place on individual serving plates
- Cover the portions with remaining 1/3 of the grated Comte
