French Market Recipe 2024 48
Ratatouille
Ingredients for 4 servings:

  • 3 medium sized Aubergines
  • 4 large tomatoes (I used ones that are starting to get soft)
  • 4 courgettes
  • 3 large garlic cloves
  • 2 large red onions
  • 100 ml olive oil
  • 1 teaspoon Herbes de Provence
  • Several sprigs of fresh thyme

Directions:    

  1. Wash all the vegetables
  2. Drop the tomatoes in a bowl of boiling water for a minute or two
  3. Carefully remove from water using a spoon, and peel off skin, remove the hard part of the core, chop into chunks
  4. Peel and slice the onion thickly
  5. Peel and chop the garlic
  6. Slice the aubergines, courgettes in thick wedges
  7. Pour the olive oil into a thick sided casserole dish
  8. Place all the veg and herbs into the dish and toss in the oil
  9. Cover dish with lid and place dish in a pre heated oven about 170C degrees for about an hour, turning vegetables with a spatula about every 15 minutes.
  10. Remove from oven and leave to cool
  11. Prior to serving, heat up gently in the oven with the lid on.
