French Market Recipe 2024 48
Ratatouille
Ingredients for 4 servings:
- 3 medium sized Aubergines
- 4 large tomatoes (I used ones that are starting to get soft)
- 4 courgettes
- 3 large garlic cloves
- 2 large red onions
- 100 ml olive oil
- 1 teaspoon Herbes de Provence
- Several sprigs of fresh thyme
Directions:
- Wash all the vegetables
- Drop the tomatoes in a bowl of boiling water for a minute or two
- Carefully remove from water using a spoon, and peel off skin, remove the hard part of the core, chop into chunks
- Peel and slice the onion thickly
- Peel and chop the garlic
- Slice the aubergines, courgettes in thick wedges
- Pour the olive oil into a thick sided casserole dish
- Place all the veg and herbs into the dish and toss in the oil
- Cover dish with lid and place dish in a pre heated oven about 170C degrees for about an hour, turning vegetables with a spatula about every 15 minutes.
- Remove from oven and leave to cool
- Prior to serving, heat up gently in the oven with the lid on.
