Manchego DOP Pueblo is a medium firm, smooth, flavoursome cheese. Made of pasteurised sheep’s milk. Matured for 3 months. The crust has a traditional basket weave pattern, originating from when the cheeses were carted to market in woven baskets on the backs of donkeys. This cheese is made with milk from Manchega ewes, which is rich and creamy and contains about double the butter fat content of cow’s and goat’s milk.
