L’Agneau au romarin en croute
Lamb and rosemary pie
Ingredients for 4 servings
- 1 large or 2 medium lamb shanks
- Several sprigs of rosemary
- 1 teaspoon Herbes de Provence (French Market shop)
- 2 onions
- 2 large garlic cloves
- 1 lemon
- 8 carrots
- 1 bottle red wine
- 1 tablespoon cornflour
- Salt and pepper to taste
- 1 pack of readymade puff pastry
Directions:
- Peel and slice the onions
- Peel and chop garlic cloves
- Wash the lemon and cut in quarters
- Wash and pat the meat dry, remove any bone chips.
- Place the meat in a large bowl.
- Add the onions, garlic, Herbes de Provence, and lemon quarters, squeezing lemon slightly to release the juice
- Pour the wine over the meat until covered
- Slightly crush some rosemary sprigs in your hand then add the sprigs on top of the meat
- Leave in the fridge for 24 hours turning occasionally.
- After 24 hours remove from the fridge and take out the lemon
- Put the meat and all the marinade into a large saucepan add salt and pepper
- Peel the carrots and chop into large pieces, add to the meat
- Bring to the boil then turn down and simmer for about 1 and 1/2 hours until the meat is tender
- Remove the meat and the sprigs of rosemary from the pot
- Slice the meat off the bone into thin bite sized pieces and return meat to the pot
- Mix a tablespoon of cornflour in a little water to dissolve it, add to the meat mixture in the pot and stir well.
- Turn up the heat under the pot slightly and stir until the liquid has thickened
- Preheat oven to 180C degrees
- Take the readymade pastry and shape it to the top of a suitable sized pie dish
- Spoon the meat mixture into the pie dish
- Top with the pastry, sticking the edges well around the edge of the dish
- Bake in the ovens for about 20 – 25 minutes until the pastry has risen and is golden
Serve straight away before the pastry drops. Decorate with small, fresh sprigs of rosemary and serve with roast potatoes and a glass of Comte de Thun La Maze Merlot available from our French Market shop, or order online at www.Frenchmarket.co.za.
