Figue au chevre
Baked figs with goat’s cheese
Ingredients for 4 servings
- 12 ripe dark purple Persian figs
- 50gr castor sugar
- 1 Vanilla pod
- 30gr Unsalted French butter from the French Market shop
- 1 tablespoon Armagnac
- 100gr soft chevre goat’s cheese (or triple cream Delice cheese)
Directions:
- Preheat the oven to 175C degrees
- Split open vanilla pod and scrape out the beans
- Add vanilla beans to castor sugar and mix in with your fingers
- Smear the inside of a baking dish with the butter paper
- Wash figs, remove stems and slice figs in half
- Place the figs cut side up in the baking dish
- Sprinkle the cut side lightly with the sugar vanilla mix
- Pour out the Armagnac and drizzle a few drops onto the cut side of the fig
- Cut butter into small pieces and place a piece on each cut surface
- Bake in oven until figs are tender about 15 -20 minutes
- Turn grill on and grill until golden for about 5 minutes, watch that the fruit does not burn
- Remove from oven and place the figs cut side up on 4 individual plates.
- Slice the chevre cheese thinly and top each fig with a piece
- Drizzle remaining cooking juice over the cheese as the bright red sauce contrasts beautifully with the whiteness of the goat’s cheese.
Ideally this desert should be served whilst still warm, but it can also be served cold. Accompany this dish with a glass of Domaine Tariquet VSOP Armagnac which pairs well with the sweet spicy flavours and the creaminess of the soft goat’s cheese.
