Liqueur de figues
Fig Liquor
Ingredients for 1 litre of alcoholic liquor
- 10 baby fig leaves
- 1 litre Eau de Vie blanche (white spirits)
- 1kg sugar
Directions:
- Sterilise a large glass bottle or glass container by boiling it in water
- Wash the fig leaves and removes the veins
- Put the fig leaves, sugar and Eau de Vie in the container, seal well
- Leave to stew during 9 days and shake well twice a day
- After 9 days pour the contents into a heavy based saucepan and bring to boil.
- Boil for exactly 3 minutes
- Leave to cool down
- Strain the mixture removing all trace of the leaves
- Pour clear, green coloured mixture into sterilised bottles
Serve slightly chilled in small liqueur glasses or over ice in a larger glass, with some little sables (small butter biscuits) or walnut macarons.
