French Market Recipe 2025 34
Feves aux lardons
Broad beans with baconIngredients for 4 servings 

Directions:
  1. Peel and slice the shallots
  2. Bring water to boil in a large saucepan
  3. Dunk the broad beans in their cases in boiling water for a minute
  4. Remove and place in a bowl of iced cold water to stop them cooking
  5. Remove the beans from their cases with your fingers
  6. Chop the bacon (lardons) into small cubes
  7. Fry in a heavy based pan for 5 minutes
  8. Turn down the heat, add the sliced shallots and Herbes de Provence
  9. Cover the pan and cook gently for about 5 minutes
  10. At same time poach eggs in boiling salted water for about 4 to 5 minutes
  11. Serve the beans and bacon on warm plates, topped with a poached egg
