Feves aux lardons
Broad beans with baconIngredients for 4 servings
- 2kgs whole broad beans
- 250gr chunky bacon (lardons)
- 2 large shallots
- 4 chicken eggs
- ½ teaspoon Herbes de Provence
Directions:
- Peel and slice the shallots
- Bring water to boil in a large saucepan
- Dunk the broad beans in their cases in boiling water for a minute
- Remove and place in a bowl of iced cold water to stop them cooking
- Remove the beans from their cases with your fingers
- Chop the bacon (lardons) into small cubes
- Fry in a heavy based pan for 5 minutes
- Turn down the heat, add the sliced shallots and Herbes de Provence
- Cover the pan and cook gently for about 5 minutes
- At same time poach eggs in boiling salted water for about 4 to 5 minutes
- Serve the beans and bacon on warm plates, topped with a poached egg
