French Market Recipe 2025 33
Posset de citron
Lemon Posset

Ingredients

  • 600ml double (thickish) cream
  • 140g caster sugar
  • 2 large lemons

Directions:

  1. Finely grate the zest of the 2 lemons and put aside
  2. Cut lemons in half and squeeze out the juice
  3. Pour the cream and sugar into a heavy based saucepan.
  4. Stir well and slowly heat up to boiling
  5. Simmer gently for 3 minutes.
  6. Remove from heat then add the lemon juice
  7. Whisk together well
  8. Add three quarters of the lemon zest and stir in
  9. Pour into serving dishes – you can use cocktail glasses for a large serving or shot glasses for small servings
  10. Chill in the fridge for at least 2 ½ to 3 hours, serve at room temperature.
  11. Before serving, sprinkle with the rest of the zest.
