Posset de citron
Lemon Posset
Ingredients
- 600ml double (thickish) cream
- 140g caster sugar
- 2 large lemons
Directions:
- Finely grate the zest of the 2 lemons and put aside
- Cut lemons in half and squeeze out the juice
- Pour the cream and sugar into a heavy based saucepan.
- Stir well and slowly heat up to boiling
- Simmer gently for 3 minutes.
- Remove from heat then add the lemon juice
- Whisk together well
- Add three quarters of the lemon zest and stir in
- Pour into serving dishes – you can use cocktail glasses for a large serving or shot glasses for small servings
- Chill in the fridge for at least 2 ½ to 3 hours, serve at room temperature.
- Before serving, sprinkle with the rest of the zest.
