Amuse-Bouche de La Truffe Noir d’hiver
Fresh black winter truffle on salt crystal butter

Ingredients for 8 bite sized servings

  • 1 fresh black winter truffle +/- 20gr from the French Market shop in season
  • 8 slices of fresh baguette
  • 50gr Butter with salt crystals from Brittany

Directions:

  1. Slice the truffle in very thin slices across the centre to get a round shaped slice
  2. Place a layer of butter onto the fresh baguette slice
  3. Place a circular slice of truffle onto the butter
  4. Sprinkle any remaining pieces of truffle over the butter

Amuse-Bouche d’œuf mayonnaise a la moutarde de Truffe
Egg mayonnaise made with truffle flavoured mustard

Ingredients for 8 bite sized servings

  • 3 large eggs
  • 1 egg yolk at room temperature
  • 1 teaspoon of truffle flavoured mustard from French Market shop
  • Teaspoon white wine vinegar
  • 120ml Oil – sunflower
  • Pinch of truffle flavoured salt from French Market shop
  • Freshly ground black pepper
  • 8 slices of fresh baguette
  • 50gr Butter salt crystals from Brittany from the French Market shop

Directions:

  1. Hard boil 3 large eggs for 8 – 10 minutes, peel and cool in fridge
  2. Put the single egg yolk in a mixing bowl
  3. Add the salt, black pepper and truffle mustard
  4. Use a whisk to stir together the egg yolk and mustard
  5. Once smoothly blended together, slowly drizzle in a little, oil drip by drip, and whisk into the mix, using about half of the oil, until mixture starts to thicken
  6. Whisk in the vinegar
  7. Whisk in the rest of the oil, drizzling very slowly until the mixture thickens.
  8. Place in fridge
  9. Chop up the hard-boiled eggs into small pieces
  10. Mix the chopped eggs into the truffle mayonnaise
  11. Spread the bread with slice of butter
  12. Layer the egg mayonnaise thickly over the butter
  13. Sprinkle the top with a little truffle flavoured salt

(If you don’t feel like making the mayo, you can buy some of our freshly made traditional mayo in our shop and add the truffle mustard.)
