French Market Recipe 2025 17
L’ail noir pommes de terre puree
Mashed potato with black garlic
Ingredients for 4

  • 1kg potatoes
  • 75gr Butter
  • 2 cloves black garlic (l’Ail noir)
  • 250ml Milk or cream
  • Salt and pepper to taste
  • 100gr grated Parmigiano reggiano from the French Market shop

Directions:

  1. Wash and peel the potatoes
  2. Cut in quarters and place in saucepan
  3. Add cold water until potatoes just covered
  4. Add ½ teaspoon salt
  5. Bring to the boil, uncovered, then simmer for 20 minutes until soft
  6. Drain water and mash the potatoes plus 2 cloves black garlic in the pan
  7. Return pan to a gentle heat and add the butter, stir in until blended
  8. Gently whip in the cream until fully mixed in
  9. Add salt and peper to taste
  10. Preheat oven to 200C degrees
  11. Rub the inside of a baking dish with the butter paper
  12. Spoon the mashed potato into the dish and smooth with the tines of a fork to make patterns on the surface
  13. Sprinkle the grated Parmigianno over the mashed potato
  14. Bake in oven for about 15 minutes

Serve as a main course for a light meal or as a side dish to a steak or roast beef, accompanied by a glass of Pavillon St Pierre Cote du Rhone rouge, available at our shop or order online at www.frenchmarket.co.za
