L’ail noir pommes de terre puree
Mashed potato with black garlic
Ingredients for 4
- 1kg potatoes
- 75gr Butter
- 2 cloves black garlic (l’Ail noir)
- 250ml Milk or cream
- Salt and pepper to taste
- 100gr grated Parmigiano reggiano from the French Market shop
Directions:
- Wash and peel the potatoes
- Cut in quarters and place in saucepan
- Add cold water until potatoes just covered
- Add ½ teaspoon salt
- Bring to the boil, uncovered, then simmer for 20 minutes until soft
- Drain water and mash the potatoes plus 2 cloves black garlic in the pan
- Return pan to a gentle heat and add the butter, stir in until blended
- Gently whip in the cream until fully mixed in
- Add salt and peper to taste
- Preheat oven to 200C degrees
- Rub the inside of a baking dish with the butter paper
- Spoon the mashed potato into the dish and smooth with the tines of a fork to make patterns on the surface
- Sprinkle the grated Parmigianno over the mashed potato
- Bake in oven for about 15 minutes
Serve as a main course for a light meal or as a side dish to a steak or roast beef, accompanied by a glass of Pavillon St Pierre Cote du Rhone rouge, available at our shop or order online at www.frenchmarket.co.za
