Salade de Quinoa Quinoa salad
Ingredients for 4 servings:
- 200gr Trio of quinoa
- 1 courgette
- 1 small punnet baby tomatoes
- 1 red pepper
- 1 yellow pepper
- 2 tablespoons pitted green olives
- 1 large shallot
- 1 teaspoon Dijon mustard
- 3 tablepoons Extra virgin Olive Oil
- 1 tablespoon vinegar herbes de Provence
- 200gr Danish Feta cheese
- Fresh ground black pepper
- 1 Lemon
- Handful of fresh mint
Directions:
- Boil the quinoa for 10-15 minutes minutes then drain and allow to cool
- Make the vinaigrette: place mustard in a bowl, slowly whisk in the olive oil, then whisk in the vinegar
- Wash the vegetables and mint and pat dry
- Peel shallot and slice finely
- Cut peppers in half and remove the seeds
- Slice peppers into small pieces
- Cut tomatoes in half
- Slice the olives
- Chop the feta into small pieces
- Mix the vegetables and quinoa together
- Add the vinaigrette and toss the salad well
- Sprinkle the feta over the salad
- Grate fresh black pepper over the Feta
- Grate the zest of the lemon over the salad
- Tear the mint leaves into small pieces and sprinkle over the salad
- Place in fridge until serving
