Salade de Quinoa Quinoa salad

Ingredients for 4 servings:


Directions:  

  1. Boil the quinoa for 10-15 minutes minutes then drain and allow to cool
  2. Make the vinaigrette: place mustard in a bowl, slowly whisk in the olive oil, then whisk in the vinegar
  3. Wash the vegetables and mint and pat dry
  4. Peel shallot and slice finely
  5. Cut peppers in half and remove the seeds
  6. Slice peppers into small pieces
  7. Cut tomatoes in half
  8. Slice the olives
  9. Chop the feta into small pieces
  10. Mix the vegetables and quinoa together
  11. Add the vinaigrette and toss the salad well
  12. Sprinkle the feta over the salad
  13. Grate fresh black pepper over the Feta
  14. Grate the zest of the lemon over the salad
  15. Tear the mint leaves into small pieces and sprinkle over the salad
  16. Place in fridge until serving
