Saumon sauce beurre et citron
Salmon with lemon butter sauce
Ingredients for 2 servings:
• 2 fillets of salmon
• 75g French butter salted
• ¼ lemon
• 6 leaves of basil
• 2 tablespoons salted capers
• 2 tablespoons Olive oil
Directions:
1. Wash the salmon fillets and pat dry
2. Cut the butter into dice
3. Wash the lemon and grate some of the zest – place aside.
4. Slice the lemon thinly, remove any pips
5. Wash the basil and tear into pieces
6. Wash the salt off the capers
7. Heat the oil in heavy based frying pan
8. Fry the salmon fillets on both sides for 3 minutes for medium cooked (do less or more depending on your preference)
9. Remove fillets from pan and place on warm dinner plates
10. Add butter, capers, basil, and lemon slices to pan and cook until lemon has slightly softened about 2 minutes
11. Spoon lemon slices and sauce over the fillets
12. Top with the lemon zest
Serve immediately while hot, accompanied by courgette noodles or mashed potatoes and a glass of Louis Latour Macon Lugny Chardonnay, available in our shop or order online at www.frenchmarket.co.za
