French Market Recipe 2025 06
Flan aux prunes
Plum flan
Ingredients for 4 servings:

  • 250g unsalted butter from the French Market
  • 250g plain flour
  • 250g caster sugar
  • 2 eggs
  • 1 tablespoon baking powder
  • 6 ripe plums

Directions:    

  1. Preheat oven to 175C degrees
  2. Cut plums into quarters and remove stones
  3. Beat together the butter and sugar until doubled in volume
  4. Add 1 whole egg at a time into batter mixture until thoroughly blended in
  5. Add vanilla essence to batter mixture
  6. Sieve flour and baking powder together
  7. Fold in flour into batter mixture until just combined
  8. Line a flan tin with baking paper
  9. Spoon the batter mixture into the flan tin
  10. Place plum slices skin side up, on top of cake batter
  11. Bake at 175 degrees for 30 to 40 minutes.
  12. Test to see when cooked by inserting skewer, it should come out clean
  13. Allow to cool in baking pan

Serve at room temperature with crème fraiche or ice cream and a glass of Armagnac, the flavour pairs well with the cooked plums. Available in our shop or order online at www.frenchmarket.co.za
