Flan aux prunes
Plum flan
Ingredients for 4 servings:
- 250g unsalted butter from the French Market
- 250g plain flour
- 250g caster sugar
- 2 eggs
- 1 tablespoon baking powder
- 6 ripe plums
Directions:
- Preheat oven to 175C degrees
- Cut plums into quarters and remove stones
- Beat together the butter and sugar until doubled in volume
- Add 1 whole egg at a time into batter mixture until thoroughly blended in
- Add vanilla essence to batter mixture
- Sieve flour and baking powder together
- Fold in flour into batter mixture until just combined
- Line a flan tin with baking paper
- Spoon the batter mixture into the flan tin
- Place plum slices skin side up, on top of cake batter
- Bake at 175 degrees for 30 to 40 minutes.
- Test to see when cooked by inserting skewer, it should come out clean
- Allow to cool in baking pan
Serve at room temperature with crème fraiche or ice cream and a glass of Armagnac, the flavour pairs well with the cooked plums. Available in our shop or order online at www.frenchmarket.co.za
