Petits gateaux au Cantal
Little Cantal cheese biscuits
Ingredients for 20 bite sized biscuits
- 100g Cantal Cheese from the French Market shop
- 100g Elle et Vire Butter
- 1 egg
- 150g flour
- 50g rolled oats
- 1 teaspoon yeast
- ¼ teaspoon salt
Directions:
- Preheat the oven to 150C degrees
- Grate the cheese
- In a large bowl mix together flour, cheese, yeast, oats and salt
- Soften the butter gently
- Mix the butter into the dry mixture
- Make a hole in the centre of the dough and break in the egg
- Mix well together
- Prepare a non-stick baking tray
- Use your hands to make walnut sized balls with the dough
- Flatten them slightly with your fingers
- Place them on the baking tray
- Bake in oven for 25 minutes
- Remove and cool on a wire tray
These biscuits can be served as an aperitif. I suggest pairing with a Valmoissine Pinot Noir from the Vars region, available from our shop.
