Petits gateaux au Cantal
Little Cantal cheese biscuits
Ingredients for 20 bite sized biscuits

Directions:                            

  • Preheat the oven to 150C degrees
  • Grate the cheese
  • In a large bowl mix together flour, cheese, yeast, oats and salt
  • Soften the butter gently
  • Mix the butter into the dry mixture
  • Make a hole in the centre of the dough and break in the egg
  • Mix well together
  • Prepare a non-stick baking tray
  • Use your hands to make walnut sized balls with the dough
  • Flatten them slightly with your fingers
  • Place them on the baking tray
  • Bake in oven for 25 minutes
  • Remove and cool on a wire tray

These biscuits can be served as an aperitif. I suggest pairing with a Valmoissine Pinot Noir from the Vars region, available from our shop.
