Pie aux Pommes
Apple Pie

Ingredients serves 6


  • 2 kgs apples
  • 120gr fine sugar
  • ¼ teaspoon cinnamon
  • 2 Tablespoons Calvados


  1. Peel and core the apples
  2. Cut into thick slices
  3. Place apples, sugar and 2 tablespoons water in a saucepan and gently heat up until slightly soft
  4. Spoon the apples into a deep baking dish
  5. Sprinkle with the Calvados and cinnamon


  1. Preheat oven to 200C degrees before making the pie
  2. Soften the butter over very low heat until slightly creamy (not runny), remove from heat
  3. Stir in the sugar to the butter
  4. Sieve flour into a heap on a marble surface or similar cold counter top
  5. Make a well in the top of the flour, add the salt, break the egg into the well
  6. Add the butter and mix all ingredients together with your fingertips until it forms a dough
  7. Dust your rolling pin and work-surface with flour
  8. Roll out the dough carefully to fit the top of your baking dish
  9. Damp the rim of your dish slightly and fit the pastry over it once you have spooned the apples into the dish, sealing the pastry against the edge of the dish
  10. Put the egg yolk into a small bowl and stir in a teaspoon of water
  11. Use a pastry brush to glaze the top of the pie with the egg yolk
  12. Pierce a small hole in the pastry to let out the steam (use a straw or rolled up piece of paper to make a little chimney in the hole)
  13. Bake in a preheated oven for 20 minutes
