French Market Recipe 2024 26
Les Madeleines
Ingredients 12 small cakes
- 3 eggs
- 125g cake flour
- 125g castor sugar
- 130gr Unsalted French butter from the French Market shop
- 1 lemon
- 4 teaspoons rum
Directions:
- Preheat oven to 180c degrees
- Sift the flour into a bowl
- Grate zest of the lemon
- Rub the cake tin with butter paper or use a non-stick silicone mold. The butter gives a glaze to the base.
- Melt the butter over a gentle heat until liquid, do not allow it to brown
- Break eggs into a mixing bowl
- Add the sugar to the eggs and whisk together for about 5 minutes until light and frothy.
- Add the flour into the egg mixture using a wooden spoon and mix in well.
- Add the melted butter (it must not be too warm) and mix in well.
- Add the rum and lemon zest and beat into mixture.
- Fill the molds about 2/3rds full with the cake mixture.
- Cook for about 25 minutes until golden brown.
- Remove from oven and allow to cool.
- Remove from the mold once cool.
