French Market Recipe 2024 26
Les Madeleines

Ingredients 12 small cakes


  1. Preheat oven to 180c degrees
  2. Sift the flour into a bowl
  3. Grate zest of the lemon
  4. Rub the cake tin with butter paper or use a non-stick silicone mold. The butter gives a glaze to the base.
  5. Melt the butter over a gentle heat until liquid, do not allow it to brown
  6. Break eggs into a mixing bowl
  7. Add the sugar to the eggs and whisk together for about 5 minutes until light and frothy.
  8. Add the flour into the egg mixture using a wooden spoon and mix in well.
  9. Add the melted butter (it must not be too warm) and mix in well.
  10. Add the rum and lemon zest and beat into mixture.
  11. Fill the molds about 2/3rds full with the cake mixture.
  12. Cook for about 25 minutes until golden brown.
  13. Remove from oven and allow to cool.
  14.  Remove from the mold once cool.
