Gateau d’Amande
Almond cake
Ingredients 8 servings
- 1 and 1/2 cups cake flour
- ¼ cup ground almonds
- 1 Lemon
- 1 cup thick plain yoghurt
- 3 large eggs
- 2/3rd cup olive oil
- ¼ teaspoon salt
- 2 teaspoons baking powder
- 1 cup caster sugar
Directions:
- Preheat oven to 175c degrees
- Grease a cake tin
- Grate zest from lemon and squeeze out the juice
- Whisk sugar and eggs until tripled in volume and very thick
- Stir in lemon juice and zest
- Add yoghurt and stir in
- Stir in the oil
- Fold in rest of the ingredients= flour, almonds, salt and baking powder
- Spoon mix into cake tin
- Bake for approximately for 45 minutes , it is cooked when you test with a skewer that comes out clean from centre of cake. You can start to check after 30 minutes to see how well it has baked.
- Once it is cooked remove from the oven and allow to cool for a few minutes before removing from the tin. Don’t leave in the tin too long or it will stick as it is moist.
- Serve on a flat cake dish accompanied by a bowl of crème fraiche or thick Greek yoghurt.
