French Market Recipe 2024 25
Gateau d’Amande
Almond cake

Ingredients 8 servings

  • 1 and 1/2 cups cake flour
  • ¼ cup ground almonds
  • 1 Lemon
  • 1 cup thick plain yoghurt
  • 3 large eggs
  • 2/3rd cup olive oil
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup caster sugar

Directions:

  1. Preheat oven to 175c degrees
  2. Grease a cake tin
  3. Grate zest from lemon and squeeze out the juice
  4. Whisk sugar and eggs until tripled in volume and very thick
  5. Stir in lemon juice and zest
  6. Add yoghurt and stir in
  7. Stir in the oil
  8. Fold in rest of the ingredients= flour, almonds, salt and baking powder
  9. Spoon mix into cake tin
  10. Bake for approximately for 45 minutes , it is cooked when you test with a skewer that comes out clean from centre of cake. You can start to check after 30 minutes to see how well it has baked.
  11. Once it is cooked remove from the oven and allow to cool for a few minutes before removing from the tin. Don’t leave in the tin too long or it will stick as it is moist.
  12. Serve on a flat cake dish accompanied by a bowl of crème fraiche or thick Greek yoghurt.
