Topinambours rotis
Jerusalem artichokes roasted
Ingredients
- 500g Jerusalem artichokes
- 200ml Olive oil
- 3 or 4 sprigs thyme
- 4 sprigs parsley
- 1 clove garlic
- Fleur du Sel de Guerande
- Mayonnaise for a dip
Directions:
- Preheat oven to 175C degrees
- Wash and scrub clean the Jerusalem artichokes
- Cut in slices about 2-3 cm wide
- Peel and crush the garlic
- Pour oil into a bowl, add the garlic
- Wash herbs and dry, rub leaves off thyme into bowl
- Stir the sliced Jerusalem artichokes into the oil until well covered
- Place the coated Jerusalem artichokes on a flat baking tray
- Sprinkle some salt over the top and bake in oven for 35 to 45 minutes until soft.
- Remove stalks from parsley chop leaves roughly and sprinkle over the roasted Jerusalem artichokes
Serve straight away accompanied by a mayonnaise dip and a glass of a Marc Bredief Vouvray from the Loire Valley, available from our shop or online at www.frenchmarket.co.za.
