Topinambours rotis
Jerusalem artichokes roasted

Ingredients 

  • 500g Jerusalem artichokes
  • 200ml Olive oil
  • 3 or 4 sprigs thyme
  • 4 sprigs parsley
  • 1 clove garlic
  • Fleur du Sel de Guerande
  • Mayonnaise for a dip

Directions:

  1. Preheat oven to 175C degrees
  2. Wash and scrub clean the Jerusalem artichokes
  3. Cut in slices about 2-3 cm wide
  4. Peel and crush the garlic
  5. Pour oil into a bowl, add the garlic
  6. Wash herbs and dry, rub leaves off thyme into bowl
  7. Stir the sliced Jerusalem artichokes into the oil until well covered
  8. Place the coated Jerusalem artichokes on a flat baking tray
  9. Sprinkle some salt over the top and bake in oven for 35 to 45 minutes until soft.
  10. Remove stalks from parsley chop leaves roughly and sprinkle over the roasted Jerusalem artichokes

Serve straight away accompanied by a mayonnaise dip and a glass of a Marc Bredief Vouvray from the Loire Valley, available from our shop or online at www.frenchmarket.co.za.
