French Market Recipe 2024 21
Lemon and Vanilla cheesecake for Mothers Day
Ingredients:

  • 250gr Speculaas biscuits from the French Market shop
  • 70gr Unsalted French butter
  • 1 vanilla pod                           
  • 500gr Philadelphia cream cheese or similar
  • 150gr caster sugar
  • 1 lemon
  • 350ml thick whipping cream
  • Punnet fresh berries (optional décor)
  • Edible flowers (optional decor)
  • 2 tablespoons Icing sugar (optional for decor)

Directions

  1. Line the base and sides of a high sided cake tin with greaseproof paper
  2. Grind or crunch the biscuits with a rolling pin into small pieces (but not a fine powder)
  3. Melt the butter gently
  4. Put the ground biscuits into a mixing bowl, add the melted butter and stir in well
  5. Press the mixture firmly into the base of the baking tin until fully covered
  6. Place in fridge and chill
  7. Grate zest from lemon and put aside
  8. Squeeze 20ml juice from lemon
  9. Split open the vanilla pod and remove the seeds
  10. Place the cream cheese, vanilla seeds, lemon zest, lemon juice, sugar and pinch of salt in a mixing bowl and gently mix together until fully integrated into a thick smooth mixture.
  11. In a separate bowl beat the cream until thick and stir into the cheese mixture, beating again until fully integrated
  12. Spoon mixture on top of the biscuit base and spread into the sides of cake tin, smooth the surface of the mixture.
  13. Cover surface with cling wrap so that the surface of the cake is completely covered
  14. Chill in fridge for at least 6 hours to let it firm up. Ideally leave overnight
  15. Prior to serving, carefully remove the cake from the cake tin and the greaseproof paper
  16. Place on a flat serving plate
  17. Optional décor – place the berries across the top of the cake
  18. Sieve the icing sugar and lightly dust the berries with the sugar
  19. Decorate the top of the cake with the edible flowers
  20. Keep in fridge until ready to serve
