Casserole de Lentilles de Puy
Puy Lentils Casserole
Ingredients for 4 servings:
Directions
- 60g per person Lentille verte de Puy from the French Market
- 2 to 3 leeks
- 100g lardons – chunky bacon pieces
- 4 large tomatoes
- 1 large carrot
- 2 cloves
- Half an onion
- ½ teaspoon Herbes de Provence from the French Market
- Salt and pepper to taste
Directions:
- Preheat oven to 180C degrees
- Wash the lentils in cold water (they do not need to soak)
- Remove outer leaves from leeks, cut off old tips and roots, wash carefully and slice
- Peel and chop the carrot
- Peel the onion, cut in half, and stick the 2 cloves into it
- Chop the tomatoes into chunks (you can remove the skins if you prefer)
- Chop bacon into small pieces and fry in a heavy based saucepan
- Add the leeks and fry for a few minutes
- Add the lentils and turn in the bacon and leeks
- Add the chopped tomatoes and Herbes de Provence and stir in
- Cover with water (or chicken stock) about 4 times the volume of the lentils and simmer gently, don’t boil.
- Stir from time to time to make sure mixture does not get too dry and stick to pan
- Cook about 25 – 30 minutes until lentils are tender and liquid has reduced
- Remove the onion and cloves
- Test for seasoning, add salt and pepper as required
