Legumes a la croute de Cantal
Vegetables with a Cantal crust
Ingredients for 4 servings:
Directions
- 150gr Cantal
- 1 Red onion
- 1 bunch green asparagus
- 200g peas
- 4 courgettes
- 1 head broccoli
- 2 tablespoons olive oil
- 250ml cream
- 30g Pecan or hazelnuts nuts
Directions:
- Preheat oven to 180C degrees
- Grate the Cantal cheese
- Peel and slice the onion
- Wash the broccoli and separate into large florets
- Remove peas from their pods
- Cut the dry end off the asparagus and slice into chunks
- Slice the courgettes thickly
- Heat oil in a large heavy based pot
- Add the vegetables and stir all the time in the warm oil for 10 minutes
- Add 100ml of water, cover and cook for 10 minutes
- Stir in cream and add salt and pepper to taste
- Spoon the vegetables and cream sauce into a deep casserole dish
- Cover with the grated cheese
- Bake for 30 minutes
- Crush the pecan nuts coarsely and toast in a dry pan until golden brown
- Remove casserole dish from the oven
- Top the cheese with the toasted nuts and serve hot.
