Legumes a la croute de Cantal
Vegetables with a Cantal crust
Ingredients for 4 servings:
Directions

  • 150gr Cantal
  • 1 Red onion
  • 1 bunch green asparagus
  • 200g peas
  • 4 courgettes
  • 1 head broccoli
  • 2 tablespoons olive oil
  • 250ml cream
  • 30g Pecan or hazelnuts nuts

Directions:

  1. Preheat oven to 180C degrees
  2. Grate the Cantal cheese
  3. Peel and slice the onion
  4. Wash the broccoli and separate into large florets
  5. Remove peas from their pods
  6. Cut the dry end off the asparagus and slice into chunks
  7. Slice the courgettes thickly
  8. Heat oil in a large heavy based pot
  9. Add the vegetables and stir all the time in the warm oil for 10 minutes
  10. Add 100ml of water, cover and cook for 10 minutes
  11. Stir in cream and add salt and pepper to taste
  12. Spoon the vegetables and cream sauce into a deep casserole dish
  13. Cover with the grated cheese
  14. Bake for 30 minutes
  15. Crush the pecan nuts coarsely and toast in a dry pan until golden brown
  16. Remove casserole dish from the oven
  17. Top the cheese with the toasted nuts and serve hot.
