Salade de chevre chaud aux figues
Toasted goat’s cheese and fig salad   
Ingredients for 4 portions

Directions:

  1. Slice the figs into quarters
  2. Whisk together the walnut oil and sherry vinegar
  3. Add salt and pepper to taste
  4. Wash the rocket and dry, toss in a bowl with the dressing
  5. Pile the rocket on 4 plates
  6. Place figs over the rocket
  7. Crunch the walnuts into pieces and toast the walnuts in a dry frying pan until browned
  8. Sprinkle walnuts with a pinch of fleur du sel (salt flakes)
  9. Slice the buche in 4 equal rounds and fry these in a separate pan, on both sides until golden, turn them carefully as the cheese goes soft
  10. Place the warm goat’s cheese carefully over the centre of the salad
  11. Sprinkle the hot walnut pieces over the cheese and salad

Serve straight away while cheese and nuts are warm. Pair with a glass of Sancerre, a delicious Sauvignon Blanc from the Loire valley, available from our shop or online at www.frenchmarket.co.za.
