Salade de chevre chaud aux figues
Toasted goat’s cheese and fig salad
Ingredients for 4 portions
- 4 handfuls of rocket
- 300g Buche de Chevre
- 400g walnuts
- 8 medium figs
- 2 tablespoons Walnut oil from the French Market
- 1/2 tablespoon vinegar de Xeres (sherry)
- Pinch of fleur du Sel (salt flakes)
Directions:
- Slice the figs into quarters
- Whisk together the walnut oil and sherry vinegar
- Add salt and pepper to taste
- Wash the rocket and dry, toss in a bowl with the dressing
- Pile the rocket on 4 plates
- Place figs over the rocket
- Crunch the walnuts into pieces and toast the walnuts in a dry frying pan until browned
- Sprinkle walnuts with a pinch of fleur du sel (salt flakes)
- Slice the buche in 4 equal rounds and fry these in a separate pan, on both sides until golden, turn them carefully as the cheese goes soft
- Place the warm goat’s cheese carefully over the centre of the salad
- Sprinkle the hot walnut pieces over the cheese and salad
Serve straight away while cheese and nuts are warm. Pair with a glass of Sancerre, a delicious Sauvignon Blanc from the Loire valley, available from our shop or online at www.frenchmarket.co.za.
