Spaghetti a la sauce de pesto
Spaghetti with pesto sauce
Ingredients
- 2 cups fresh basil leaves
- 1 garlic clove
- 125g Parmigiano Reggiano 18 month matured, from the French Market shop
- 100ml olive oil
- 75g pine nuts
- Pasta to suit
Directions:
- Remove the basil leaves from the stems, wash and dry
- Toast the pine nuts in a dry pan until lightly browned
- Grate the parmigiano
- Peel the garlic clove
- Use a pestle and mortar and pound garlic and nuts until smooth (or blend in a food mixer)
- Add the basil leaves and pound until smooth
- Stir in olive oil and Parmigiano Reggiano (retain some to sprinkle over the finished dish)
- Boil pasta as directed
- Drain thoroughly and put into a large serving bowl
- Top with Pesto sauce and mix ingredients until pasta well covered with sauce.
- Grate some Parmigiano and sprinkle over the top.
Serve straight away while hot, paired with a glass of Whispering Angel rose from Provence available from the French Market shop or order on our online site.
