Spaghetti a la sauce de pesto 
Spaghetti with pesto sauce



  1. Remove the basil leaves from the stems, wash and dry
  2. Toast the pine nuts in a dry pan until lightly browned
  3. Grate the parmigiano
  4. Peel the garlic clove
  5. Use a pestle and mortar and pound garlic and nuts until smooth (or blend in a food mixer)
  6. Add the basil leaves and pound until smooth
  7. Stir in olive oil and Parmigiano Reggiano (retain some to sprinkle over the finished dish)
  8. Boil pasta as directed
  9. Drain thoroughly and put into a large serving bowl
  10. Top with Pesto sauce and mix ingredients until pasta well covered with sauce.
  11. Grate some Parmigiano and sprinkle over the top.
