Parfait aux marrons
Chestnut Parfait
Ingredients for 8 guests
- 100g cooked chestnuts from the French Market shop
- 2 vanilla pods from the French Market shop
- 65g sugar
- 4 egg yolks
- 500ml of whipping cream
- 30ml Cognac
- 10g of honey for drizzle
- 1 large pear
- 1 or 2 small apples
- 1 lemon
Directions:
- Break up the chestnuts into small pieces
- Split the vanilla pod and scrape out the vanilla seeds
- Beat sugar, Cognac, egg yolks and vanilla seeds until the mixture thickens
- Separately whisk cream until it thickens
- Fold into the egg and sugar mixture
- Add chestnuts and mix in
- Spoon into a rectangular tub
- Wrap with cling wrap and place in freezer over night
- Peel and remove core of pear and apples
- Slice thinly and sprinkle well with lemon juice and place on a baking sheet
- Freeze overnight. Slice circles in half before using
To serve, turn out the rectangle of iced dessert, cut in thick slices, decorate with slices of frozen pear and apples and drizzle honey over the iced dessert.
Serve straight away with a glass of Cognac available from the French Market shop.
