Liqueur de figue
Fig liqueur
Ingredients for 1 litre of liqueur  

  • 10 baby fig leaves
  • 1 litre Eau de Vie blanche (white spirits)
  • 1 kg sugar

Directions:

  1. Sterilise a large glass bottle or glass container by boiling it in water
  2. Wash the fig leaves and remove the veins
  3. Put the fig leaves, sugar and Eau de Vie in the container seal well
  4. Leave to stew during 9 days and shake well twice a day
  5. After 9 days pour the contents into a heavy based saucepan and bring to boil.
  6. Boil for exactly 3 minutes
  7. Leave to cool down
  8. Strain the mixture removing all trace of the leaves
  9. Pour the clear, green coloured mixture into sterilised bottles

To serve – chill lightly and serve in small liqueur glasses or over ice in a larger glass.  Serve the liqueur with some little sables (small butter biscuits) or pistachio macarons.
