Boquerones aux oecus mayonnaise
White anchovies with egg mayo
Ingredients for 4 starters
- 1 tub boquerones (white anchovies with garlic and parsley) from the French Market
- 4 eggs
- 8 olives
- Half baguette
- 200ml aioli
- Sprigs of parsley
Directions:
- Boil the eggs until hard about 8 – 10 minutes depending on size, chill in cold water.
- Once cold, carefully remove the shell
- Cut eggs in half lengthways
- Spoon out the hardboiled yolk into a bowl and mash with the Aioli
- Thinly remove a slice off the rounded base of the egg white so that it sits flat
- Place egg whites in fridge
- Slice the olives thinly and stir into the egg mash
- Refill the egg whites with the filling
- Slice the baguette at an angle to get 8 small slices
- Lightly toast the baguette
- Place the filled egg white on top of the toasted baguette
- Layer the white anchovies over the egg filling
- Spoon the oil from the anchovies over the eggs so that it drips onto the baguette
- Decorate each egg with a couple of leaves of parsley and serve
