Boquerones aux oecus mayonnaise
White anchovies with egg mayo 
Ingredients for 4 starters  

  • 1 tub boquerones (white anchovies with garlic and parsley) from the French Market
  • 4 eggs
  • 8 olives
  • Half baguette
  • 200ml aioli
  • Sprigs of parsley


  • Boil the eggs until hard about 8 – 10 minutes depending on size, chill in cold water.
  • Once cold, carefully remove the shell
  • Cut eggs in half lengthways
  • Spoon out the hardboiled yolk into a bowl and mash with the Aioli
  • Thinly remove a slice off the rounded base of the egg white so that it sits flat
  • Place egg whites in fridge
  • Slice the olives thinly and stir into the egg mash
  • Refill the egg whites with the filling
  • Slice the baguette at an angle to get 8 small slices
  • Lightly toast the baguette
  • Place the filled egg white on top of the toasted baguette
  • Layer the white anchovies over the egg filling
  • Spoon the oil from the anchovies over the eggs so that it drips onto the baguette
  • Decorate each egg with a couple of leaves of parsley and serve
