French Market Recipe 2024 01
Aligot de Cantal
Potato and Cantal cheese dish
Ingredients
- 8 large potatoes
- 300g of Cantal from the French Market shop
- 60 g fresh cream cheese
- 2 large cloves of garlic
- 60g of French butter
- 150ml of milk
- 8 fat pork sausages
- Salt and pepper
Directions:
- Prick the sausages to stop them from splitting.
- Fry the sausages in a little oil until brown on all sides ( about 15 minutes) then keep warm in the oven
- Remove the crust from the Cantal and slice it thinly.
- Peel the garlic cloves and crush.
- Boil the potatoes in their skins for 20 – 25 minutes until soft.
- Once the potatoes are cooked, drain off the water and peel off their skins.
- Return the potatoes to the saucepan and crush the potatoes with a potato masher to remove all lumps.
- Chop the butter into small cubes.
- Add the milk, butter, cream cheese, Cantal and garlic, to the mashed potatoes.
- Stir continuously for about 15 minutes in a figure of 8 with a wooden spoon until you have a homogenous creamy mixture.
- Add salt and peper to taste.
- Serve immediately by pouring the mixture from a large wooden spoon high above each bowl and add the sausages.
