French Market Recipe 2024 01
Aligot de Cantal
Potato and Cantal cheese dish

Ingredients   

  • 8 large potatoes
  • 300g of Cantal from the French Market shop
  • 60 g fresh cream cheese
  • 2 large cloves of garlic
  • 60g of French butter
  • 150ml of milk
  • 8 fat pork sausages
  • Salt and pepper

Directions:

  • Prick the sausages to stop them from splitting.
  • Fry the sausages in a little oil until brown on all sides ( about 15 minutes) then keep warm in the oven
  • Remove the crust from the Cantal and slice it thinly.
  • Peel the garlic cloves and crush.
  • Boil the potatoes in their skins for 20 – 25 minutes until soft.
  • Once the potatoes are cooked, drain off the water and peel off their skins.
  • Return the potatoes to the saucepan and crush the potatoes with a potato masher to remove all lumps.
  • Chop the butter into small cubes.
  • Add the milk, butter, cream cheese, Cantal and garlic, to the mashed potatoes.
  • Stir continuously for about 15 minutes in a figure of 8 with a wooden spoon until you have a homogenous creamy mixture.
  • Add salt and peper to taste.
  • Serve immediately by pouring the mixture from a large wooden spoon high above each bowl and add the sausages.
