Marquise au chocolat
Rich chocolate marquiseIngredients
- 500g dark chocolate
- 50g castor sugar
- 8 eggs
- 150g unsalted butter
- 1 teaspoon cognac
- 250 ml thick cream
- Punnet mixed berries- blueberries/raspberries/
strawberries
Directions
- Separate eggs, place 8 yolks in one container, place 5 egg whites in a separate container, the remaining 3 egg whites can be used for another recipe.
- Cut butter into small pieces put aside
- Cut chocolate into small pieces
- Place chocolate in the top of a double boiler, (or in a bowl placed over a larger bowl containing hot water) and stir the chocolate with a wooden spoon until it melts.
- Take the bowl off the heat and stir in the butter and sugar until completely blended
- Add one egg yolk at a time and beat in hard until completely blended, then add next yolk until all yolks beaten in.
- In a separate bowl, whisk the 5 egg whites until stiff
- Lightly fold the stiff egg whites into the chocolate mixture
- Finally add the Cognac and lightly mix in
- Spoon into a greased chocolate mould or deep pudding bowl and chill in fridge for several hours.
- Whisk cream until thick
- Turn out the chocolate dessert onto a flat serving plate
- Spread the cream all over the chocolate until completely covered
- Decorate with the fresh berries, if the cream is a bit soft then place the berries all around the base of the dessert.
Serve straight away with a glass of Mailly Grand Cru Champagne or a glass of Cognac from the French Market shop in Cape Town or order online with us.
