Le Pudding de Noel
Traditional Christmas PuddingIngredients
- 115g Flour
- 115ml grated unsalted butter or beef suet
- 115g Sultanas
- 115g Seeded raisins
- 115g Currants
- 115g Mixed peel
- 115g carrot raw and grated
- 115g Brown sugar
- 115g peeled raw potato grated
- Grated rind of lemon
- 60g shelled coarsely chopped almonds
- ½ teaspoonful grated nutmeg
- ½ teaspoonful grated cinnamon
- ½ teaspoonful mixed spice
- 125ml cognac (plus extra to flambe the pudding)
Directions
- Peel and grate potatoes and carrots
- Grate the rind of the lemon
- Grate the butter or suet
- Mix all the ingredients together
- Each member of the family should stir the mixture with a wooden spoon and make a wish
- Grease a pudding basin and turn the mixture into the basin, cover with grease proof paper, or a cloth napkin. The paper must overlap the edges of the bowl, then tie string around the bowl.
- Place in a saucepan of boiling water that reaches below the top of the pudding, and steam for 3 hours. Keep topping up the hot water.
- Remove pudding from saucepan, remove the covering and turn the pudding out onto a large serving plate.
- If you are goiing to flambe the pudding, pour a little brandy over the warm pudding and set alight (taking great care not to burn yourself)
Serve with a bowl of thick cream and some brandy butter and accompany with a glass of Frapin Cognac from the French Market shop in Cape Town or order online with us.
