Chestnut stuffingIngredients for turkey

  •  2 x 420g jars whole cooked chestnuts from the French Market shop
  • 1 egg
  • 300ml chicken stock
  • 125g lard / suet
  • ½ teaspoon Herbes de Provence
  • 1 teaspoon sugar
  • Pinch of salt and pepper

Directions:

  1. Simmer the chestnuts in the stock for an hour
  2. Drain and mash them through a sieve
  3. Mix in the egg, fat, herbs, and seasoning until fully blended.
  4. Stuff inside the turkey and seal the opening using skewers or tooth picks
