Roti de porc farci aux oranges
Pork roast stuffed with oranges.
Ingredients for 8 guests
  • 2kg deboned pork joint – I used shoulder
  • 4 small oranges
  • 2 tablespoons Olive oil
  • 6-8 sweet potatoes medium size
  • 2 bunches medium sized carrots
  • Coarse salt

Directions:
  1. Preheat oven to 170C degrees
  2. Wash the carrots cut off the green tops
  3. Thickly slice the sweet potatoes
  4. Cut the oranges in half
  5. Stuff the joint with the cut oranges, filling the gap where the bone was removed
  6. Wrap the meat around the oranges and tie the joint tightly with string
  7. Check the skin of the joint has been deeply scored
  8. Rub the skin with a little olive oil and coarse salt
  9. Pour a tablespoon of olive oil into the base of a large, deep sided casserole dish
  10. Turn the sweet potato and carrotts in the oil
  11. Place the meat on top of the vegetables
  12. Cover with a lid and bake for about 2 and half hours
  13. Turn up the heat to 200C degrees
  14. Remove lid from casserole dish and spoon pork fat over the skin to help crackle
  15. Bake in hot oven for about 30 minutes until crackling has formed, baste from time to time
  16. Remove joint from casserole dish and place in a warm serving dish
  17. Remove the oranges and squeeze the juices and chop the skins, mix into the vegetables
  18. Place vegetables in a hot bowl with the meat juice (remove some of the hot fat)
  19. Slice the crackling and pull the meat into pieces.
  20. Serve the pulled pork on the vegetables, topped with some crackling and some sauce.
I suggest pairing this delicious pork dish with a glass of Chapoutier’s Combe Pilate organic Viognier from the Rhodaniennes hills, overlooking the Rhone valley
