Roti de porc farci aux oranges
Pork roast stuffed with oranges.Ingredients for 8 guests
- 2kg deboned pork joint – I used shoulder
- 4 small oranges
- 2 tablespoons Olive oil
- 6-8 sweet potatoes medium size
- 2 bunches medium sized carrots
- Coarse salt
Directions:
- Preheat oven to 170C degrees
- Wash the carrots cut off the green tops
- Thickly slice the sweet potatoes
- Cut the oranges in half
- Stuff the joint with the cut oranges, filling the gap where the bone was removed
- Wrap the meat around the oranges and tie the joint tightly with string
- Check the skin of the joint has been deeply scored
- Rub the skin with a little olive oil and coarse salt
- Pour a tablespoon of olive oil into the base of a large, deep sided casserole dish
- Turn the sweet potato and carrotts in the oil
- Place the meat on top of the vegetables
- Cover with a lid and bake for about 2 and half hours
- Turn up the heat to 200C degrees
- Remove lid from casserole dish and spoon pork fat over the skin to help crackle
- Bake in hot oven for about 30 minutes until crackling has formed, baste from time to time
- Remove joint from casserole dish and place in a warm serving dish
- Remove the oranges and squeeze the juices and chop the skins, mix into the vegetables
- Place vegetables in a hot bowl with the meat juice (remove some of the hot fat)
- Slice the crackling and pull the meat into pieces.
- Serve the pulled pork on the vegetables, topped with some crackling and some sauce.
