Pappardelle au truffe noire d’automne
Pappardelle with fresh black autumn truffles
Ingredients for 4 guests
- 40g fresh black Autumn truffle Uncinato
- 500g Pappardelle (or tagliatelle or linguine)
- 150g salted butter
- 100g Parmigiano reggiano
- Freshly ground black pepper and salt to taste
Directions:
1. Grate the parmigiano
2. Boil the pasta as per directions until al dente (not completely soft)
3. Strain off the cooking water, reserving a small bowl of the water
4. Cut butter in small blocks and melt in a heavy based frying pan
5. Add the drained pasta to the butter and toss, coating the pasta
6. Add the grated parmigiano and enough of the cooking water to keep the mixture creamy
7. Season with freshly ground black pepper and salt to taste
8. Spoon into individual serving bowls and thinly slice the truffle over the pasta.
Serve straight away accompanied by a glass of Pernand Vergelesses en Caradeux, an intensely flavoured Premier Cru chardonnay from Burgundy available at our French Market shop.
