Concombre au caviar
Cucumber and caviar

Ingredients for 4 portions

  • 1 tin of 30g caviar
  • 1 small avo chilled
  • 1 lemon
  • 1 tablespoon mayonnaise chilled
  • 1 long English cucumber chilled

Directions:

  1. Squeeze the juice from the lemon
  2. Mash the avo with a spoonful of lemon juice and mayonnaise until soft and creamy
  3. Cut the cucumber in wedges about 2 fingers wide
  4. Stand each cucumber wedge upright
  5. Scoop out most of the centre of each cucumber wedge to form a small bowl
  6. Spoon some mashed avo into the cucumber
  7. Top with a small quantity of caviar

 Serve immediately paired with a glass of Whispering Angel Rose wine from Provence
