Œufs brouille a la truffe
Scrambled eggs with truffles
Ingredients for 4 portions
- 8 free range eggs
- 10-15 grammes fresh black winter truffle
- 4 tablespoon thick Crème fraiche
- 50g butter
- A few chives optional
- Brioche
Directions:
- Put the truffles and the eggs in the same container overnight, before you make the dish, the aroma seeps into the eggs
- Cut half the truffle in tiny pieces and the rest in thin slices
- Chop the chives into small pieces
- Break the eggs into a bowl add the crème fraiche and beat lightly
- Leave to infuse for half an hour
- Melt the butter in a heavy based saucepan over a moderate heat.
- Add the egg mixture and stir while the mixture heats up
- Remove from heat once eggs have become thick and creamy
- Add salt and pepper to taste,
- Lightly toast slices of brioche
- Spoon the scrambled eggs over the brioche and top with slices of truffle and chives
Serve straight away accompanied by a glass of red wine from Bordeaux available from the French Market shop.
