Salade au chevre chaud
Toasted goat’s cheese salad
Ingredients for 4 starter portions
- 1 butter lettuce
- Packet of baby rocket leaf
- 200g slice of buche de chevre from the French Market
- 100g Walnuts or pecan nuts
- Fresh herbs – basil – thyme
- Baguette
- 50ml Walnut oil La Tourangelle from the French Market
Directions:
- Wash the lettuce, rocket and herbs and dry
- Chop the walnuts / pecan nuts
- Slice the buche into 4 slices
- Cut 4 finger width large slices of baguette
- Tear the lettuce into bite-sized pieces
- Place the lettuce and rocket in a salad bowl
- Chop the herbs and add to the salad
- Toss the salad in the walnut oil and place in fridge
- Grill the slices of baguettes on one side until golden
- Turn over the toasted slices and place on a heat proof dish.
- Place a slice of buche on each toast
- Add the chopped nuts on top of the buche
- Place the toasts back under the grill until the cheese and nuts have browned slightly
- Remove from the grill
- Share the salad into 4 portions and place on individual plates
- Place one toast with buche and nuts on top of each salad
- Grind some fresh black pepper over the top.
Serve straight away accompanied by a glass of Sauvignon Blanc Comte de la Doucette Sancerre available from the French Market shop.
