Le “Crumble” de rhubarbe
Rhubarb crumble
Ingredients for 6
- 500g Rhubarb
- 100g caster sugar
- Tot of Armagnac
- 150g self-raising flour
- 90g butter unsalted
- 50g brown muscovado sugar
Directions:
- Wash the rhubarb, trim the ends, if old rhubarb then try and peel away any old, harder or dry edges
- Chop the rhubarb into short pieces
- Put the rhubarb and sugar into a heavy based saucepan and simmer very gentle for about 15 minutes
- Once the rhubarb has softened, add the tot of Armagnac, stir in, and spoon the mixture into a high sided baking dish.
- Preheat oven to 180C
- Chop the butter into small pieces and add the flour, rub together with fingers until the butter is mixed completely with the flour and you have a crumbly mixture
- Sprinkle the crumble over the top of the rhubarb mixture and spread it right to the edges
- Bake in the oven for about 30 minutes until the crumble is golden brown.
Serve hot with a dollop of Devonshire clotted cream…or a slice of triple cream Delice and a glass of Armagnac available from our shop or order online from us.
