Crème de Riz au citron
Creamy rice with lemon syrup
Ingredients for 4
- 100g Short grained or Arborio Rice
- 350ml Milk
- 1 Vanilla pod
- 90g Sugar
- 1 large lemon
- 12 Strawberries
- Pinch of salt
- 100 ml crème fraiche
Directions:
- Wash and thinly slice the lemon.
- Place the sliced lemon in a pan, cover with water and boil for 3 minutes, remove from heat and drain off liquid.
- Heat up 30g sugar with a tablespoon water then add the sliced lemon, simmer gently for 15 minutes. Remove from heat and cool.
- Split the vanilla pod carefully with a sharp knife and remove all the tiny seeds with the point of the knife.
- Pour 300ml milk into a saucepan, add the vanilla seeds and pinch of salt and bring to boil.
- Wash rice in cold water, put in a saucepan with cold water and boil for 2 minutes, then drain.
- Add the drained rice to the milk and vanilla seeds, simmer for 15 minutes until rice is cooked.
- Pour remaining 50ml milk and 60g sugar into a saucepan, heat gently until sugar dissolves.
- Stir into the cooked rice, remove rice from pan and allow to cool.
- Slice strawberries almost to base and fan out the shape.
- Spoon the cooked rice into small bowls, top with a spoonful of lemon syrup.
- Spoon some crème fraiche around the lemon syrup.
- Decorate with strawberries.
