Soupe d’echalottes au Roquefort
Roquefort and shallot Soup
Ingredients for 6
Directions:
- Preheat oven to 180C degrees
- Grate the Comte
- Peel the echalottes and slice thinly
- Melt butter in a heavy based frying pan
- Add the shallots and fry gently until goldan
- Boil water in the kettle and add 1,250L to the shallots
- Add a pinch of grated nutmeg
- Boil for 5 miniutes
- Thinly slice the old baguette
- Spread the roquefort on 12 slices of old bread
- Place the slices in the bottom of a deep, oven proof soup pot
- Pour the soup into the pot and add the brandy
- Sprinkle the grated Comte over the top of the soup
- Bake for 30 minutes
