Tartelette au fraises et meringue
Strawberry and meringue tartlets
Ingredients for 4
- 1 large or 2 small egg whites at room temperature
- 25g castor sugar
- 4 frozen sweet pastry tartlets from the French Market shop
- 1 punnet of fresh strawberries
- 1 Pomegranate
- 100ml crème fraiche
Directions:
- Defrost the pastry tartlets
- Wash strawberries, remove stems and cut in half (or quarter if large)
- Prick the tartlet bases with a fork
- Cover with greaseproof paper and bake in their foil bases at 180C for 10 minutes
- Remove from oven and allow to cool
- Beat the egg whites until thick and standing in peaks, slowly fold in the sugar little by little
- Layer the strawberries into the tartlet cases
- Spoon the meringue over the strawberries
- Bake in oven at 150C degrees for 15 to 20 minutes until meringue is lightly golden
- Allow to cool. Carefully remove foil base and place on individual side plates
- Open the pomegranate and spoon out the pips
- Decorate top of meringue with the pips
- Spoon a dollop of crème fraiche on the side of each tartlet
Serve accompanied by a glass of Tribaut Schloesser rose champagne available from the French Market shop or order online from our website.
