Oeufs au caviar
Eggs with caviar

Ingredients for 4

  • 4 free range eggs
  • 150ml double cream
  • 1 tablespoon cut chives
  • 1 tin caviar 50g
  • 1 tablespoon finely cut white onion

Directions:

  1. Peel and finely cut the onion
  2. Wash the chives and finely cut
  3. Carefully cut the top off the eggs to form a lid
  4. Pour 3 of the raw eggs into a bowl (use the fourth raw egg for another recipe)
  5. Wash out the insides of the eggshell and lid, allow to dry
  6. Whisk the cream and pinch of salt into the raw eggs until thoroughly blended
  7. Gently cook the egg and cream mixture until lightly scrambled
  8. Remove from heat
  9. Mix in the cut chives and onion into the scrambled egg
  10. Spoon the egg mixture into the egg shells, top with a portion of caviar and cover with the egg lid, place in an egg cup and serve straight away
