Oeufs au caviar
Eggs with caviar
Ingredients for 4
- 4 free range eggs
- 150ml double cream
- 1 tablespoon cut chives
- 1 tin caviar 50g
- 1 tablespoon finely cut white onion
Directions:
- Peel and finely cut the onion
- Wash the chives and finely cut
- Carefully cut the top off the eggs to form a lid
- Pour 3 of the raw eggs into a bowl (use the fourth raw egg for another recipe)
- Wash out the insides of the eggshell and lid, allow to dry
- Whisk the cream and pinch of salt into the raw eggs until thoroughly blended
- Gently cook the egg and cream mixture until lightly scrambled
- Remove from heat
- Mix in the cut chives and onion into the scrambled egg
- Spoon the egg mixture into the egg shells, top with a portion of caviar and cover with the egg lid, place in an egg cup and serve straight away
