Dragon fruit granita
Ingredients for 2 people
- 1 dragon fruit
- 1 lime
- 1 teaspoon sugar
- 50ml Orange juice
- A sprinkling of toasted almond slivers (optional)
Directions:
- Cut the dragon fruit down the middle lengthways
- Scoop out the fruit and chop into small pieces, leave sufficient fruit around the inside of the skin to form 2 bowls
- Chop the fruit into smaller pieces and place on a flat plat
- Cut the lime in half and squeeze out the juice over the chopped fruit
- Place the 2 fruit “bowls” in the freezer
- Place the plate with the chopped fruit in the freezer
- After about an hour , once the chopped fruit is frozen, remove from the freezer and let thaw slightly for about 5 minutes
- Add the orange juice and teaspoon of sugar to the fruit, and mash with a fork or potato masher
- Return the pulp to the freezer for another hour
- Remove from freezer and mash again.
- Spoon the pulp into the 2 frozen fruit “bowls” and place in a container back in the freezer.
- Toast the almond slivers lightly. Sprinkle over the top of the granita, once the nuts are cool.
To serve, remove the fruit from the freezer let it thaw a few minutes until slightly softened and serve straight away accompanied by a glass of iced Limoncello, available from our French Market shop or order online.
