Biscuit Lapin de Pacques
Easter rabbit biscuits
Ingredients 20 biscuits
- 75gr butter unsalted
- 6 tablespoons golden syrup
- 2 tablespoons milk
- 330gr plain flour
- 85gr castor sugar
- 1 teaspoon bicarbonate of soda
- 1 teaspoon ground ginger
- ½ teaspoon allspice
- 1 teaspoon cinnamon
- Flour to dust board
- Choc chips or smarties for decoration.
Sugar icing
- 100g icing sugar
- 15ml milk
Directions:
- In a heavy based saucepan stir together the butter, sugar, and golden syrup over a gentle heat, until the sugar has melted
- Add the allspice, ginger and cinnamon and stir in
- In a mixing bowl mix together the flour and bicarb of soda
- Add the melted butter, sugar, syrup and knead together
- Place the dough on to a floured board and roll out to a biscuit thickness
- Use a cutter to make round Bunny shaped faces with long ears
- Place on a greased baking tray
- Preheat oven to 180C degrees
- Bake in the oven for about 12 minutes
- Make icing by stirring a little milk gently into the icing sugar, keep mixture fairly thick
- You can add food colouring if you wish to have different coloured faces
- Remove biscuits from oven and allow to cool
- Decorate the biscuits with bunny faces using icing and chocolate chips or smarties for their eyes and noses
