Biscuit Lapin de Pacques
Easter rabbit biscuits

Ingredients 20 biscuits

  • 75gr butter unsalted
  • 6 tablespoons golden syrup
  • 2 tablespoons milk
  • 330gr plain flour
  • 85gr castor sugar
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground ginger
  • ½ teaspoon allspice
  • 1 teaspoon cinnamon
  • Flour to dust board
  • Choc chips or smarties for decoration.

Sugar icing

  • 100g icing sugar
  • 15ml milk

Directions:

  1. In a heavy based saucepan stir together the butter, sugar, and golden syrup over a gentle heat, until the sugar has melted
  2. Add the allspice, ginger and cinnamon and stir in
  3. In a mixing bowl mix together the flour and bicarb of soda
  4. Add the melted butter, sugar, syrup and knead together
  5. Place the dough on to a floured board and roll out to a biscuit thickness
  6. Use a cutter to make round Bunny shaped faces with long ears
  7. Place on a greased baking tray
  8. Preheat oven to 180C degrees
  9. Bake in the oven for about 12 minutes
  10. Make icing by stirring a little milk gently into the icing sugar, keep mixture fairly thick
  11. You can add food colouring if you wish to have different coloured faces
  12. Remove biscuits from oven and allow to cool
  13. Decorate the biscuits with bunny faces using icing and chocolate chips or smarties for their eyes and noses
