Salade de crevettes, œufs durs et œufs de lompe
Prawn and egg mayonnaise salad with black lumpfish roe

Ingredients for 4 portions

•    1 large butter lettuce
•    8 eggs @ The French Market
•    250g plump prawns
•    1 Jar black lumpfish roe @ The French Market
•    1 jar Benedicta French mayonnaise @The French Market
•    Few spring onions
•    Ground black pepper

Directions:

1.    Boil the eggs for 10 minutes in salted water, remove from hot water and leave to cool in cold water.
2.    Remove shell when cool and put in fridge. Just before serving cut lengthways in half.
3.    Boil the prawns until pink. Remove from water, remove shells, and black vein. Chill in fridge
4.    Wash the lettuce and dry it, keep in a cool place, just before serving, cut the lettuce into bite sized pieces and lay over a serving platter.
5.    Place the cut halves of the eggs face down on the lettuce.
6.    Place the prawns around the eggs.
7.    Spoon a generous amount of mayonnaise over the eggs and the prawns.
8.    Sprinkle the chopped spring onions over the whole salad.
9.    Sprinkle the fish roe over the top of the mayonnaise.
10.    Grind some black pepper over the top.

Serve straight away accompanied by a fresh crusty baguette and a glass of Viognier from the Rhone valley such as the Verzier Boheme from the Collines Rhodaniennes, produced on the slopes of the Rhone Valley. If you are serving this salad at a picnic, you can prepare all the ingredients in advance and assemble the salad at the last minute.
