French Market Recipe 2025 01

Quenelles

Ingredients for 2 servings:

  • 100g cooked chicken breast
  • 100g Comte du Jura from the French Market
  • 2 eggs
  • ¼ cup milk
  • Flour white sifted
  • Pinch of nutmeg
  • Salt and Pepper
  • 2 Tablespoons mayonnaise
  • 1 spoonful of tomato pulp or puree
  • Large sprig of fresh basil leaves

Directions:    

  1. Put the cooked chicken in a blender and blend until fine
  2. Grate the Comte cheese finely and mix ¾ into chicken
  3. Prepare tomato sauce by mixing traditional mayonnaise with the tomato puree.
  4. Finely chop the basil leaves and add to the sauce. Place in fridge until needed.
  5. Break the eggs into a large mixing bowl and beat with a whisk
  6. Mix in the milk and whisk
  7. Slowly add in flour and mix in enough until the dough is quite sticky
  8. Add the blended chicken, cheese, nutmeg, salt and pepper and stir in well with a wooden spoon
  9. Fill a large saucepan with boiling salted water
  10. Make balls of the dough using 2 dessert spoons to shape into oval balls
  11. Drop each ball in the boiling water and cook for 15 minutes, they must rise to the surface
  12. Once cooked remove from water and drain
  13. Place on a warm serving dish and sprinkle the remaining cheese over the top.
  14. Serve straight away accompanied by a baby leaf salad and the bowl of tomato mayonnaise on the side
