Quenelles
Ingredients for 2 servings:
- 100g cooked chicken breast
- 100g Comte du Jura from the French Market
- 2 eggs
- ¼ cup milk
- Flour white sifted
- Pinch of nutmeg
- Salt and Pepper
- 2 Tablespoons mayonnaise
- 1 spoonful of tomato pulp or puree
- Large sprig of fresh basil leaves
Directions:
- Put the cooked chicken in a blender and blend until fine
- Grate the Comte cheese finely and mix ¾ into chicken
- Prepare tomato sauce by mixing traditional mayonnaise with the tomato puree.
- Finely chop the basil leaves and add to the sauce. Place in fridge until needed.
- Break the eggs into a large mixing bowl and beat with a whisk
- Mix in the milk and whisk
- Slowly add in flour and mix in enough until the dough is quite sticky
- Add the blended chicken, cheese, nutmeg, salt and pepper and stir in well with a wooden spoon
- Fill a large saucepan with boiling salted water
- Make balls of the dough using 2 dessert spoons to shape into oval balls
- Drop each ball in the boiling water and cook for 15 minutes, they must rise to the surface
- Once cooked remove from water and drain
- Place on a warm serving dish and sprinkle the remaining cheese over the top.
- Serve straight away accompanied by a baby leaf salad and the bowl of tomato mayonnaise on the side
